Apples are rich in anti-oxidants, which help combat cancer cells, heart disease and type-2 diabetes. Apples also add a good texture to the finished product, with the honey acting as a yummy sauce for the cakes. Honey is also a healthier option, as it is rich in natural sugars and contains essential nutrients and minerals.
Ingredients:
60 ml honey
2 small pink lady apples, cut into 6 x 1cm slices
150 ml castor sugar
3 eggs
5 ml vanilla essence
320 ml self-raising flour
5 ml baking powder
pinch of salt
125 ml low-fat margarine (transfat-free), melted or 65 ml apple puree
Instructions:
1. Pre-heat the oven to 180ÂC. Use a spray to grease 6 x 125 ml capacity muffin tins.
2. Divide the honey between the muffin cups.
3. Trim the edges of the apples with a round cutter in order to fit the base of the muffin tins. Place the trimmed apple slices on top of the honey.
4. Beat the sugar, eggs and vanilla using an electric mixer for 4-5 minutes or until thick and pale.
5. Sift the flour and baking powder together and fold into the egg mixture.
6. Lastly fold the margarine or puree in until just combined.
7. Divide the batter between the muffin cups and bake for 18-20 minutes until golden brown.
8. Cool for 5 minutes before turning out. Serve warm.
