Tuna is a nutritious food, rich in essential nutrients including protein, vitamin D and omega-3 fatty acids. Omega-3 fatty acids help to keep your brain and heart healthy.

Serves 4

400 g fresh tuna (sashimi-grade)
250 g fine green beans, halved lengthwise
250 g cherry tomatoes, halved
1/2 red onion, sliced
100 g black olives
handful of basil leaves

Dressing:
2 shallots, finely chopped
45 ml white wine vinegar
2 tbsp Dijon mustard
1 anchovy fillet, chopped
2 tbsp olive oil
salt and freshly ground black pepper

1. Wrap the tuna in plastic wrap and place it in the freezer for about an hour to firm it up before slicing. Slice into paper thin slices with a very sharp knife. Overlap on 4 plates and top each with beans, tomatoes, onion, olives and basil.
2. Combine all of the dressing ingredients in a bowl and mix well. Season to taste.
