If you like it hot and spicy, here’s a lunch treat that will leave you on fire and ready for action.

SERVES 1

Ingredients:
2 x 200 g packets of Tastic Spicy Rice
1 T (15 ml) olive oil
2 cloves or garlic
1/2 (125 ml) sliced chorizo
1 t (5 ml) paprika
200 g white fish
100 g calamari
3 T (45 ml) white wine
1 lemon
200g prawns
3 T (45ml) parsley

Instructions:
Cook 2 x 200 g packets of Tastic Spicy Rice for Spanish Paella (you’ll only need one sachet of flavouring though) and set aside. Heat 1 T (15 ml) olive oil in a large, non-stick frying pan and saute 2 cloves crushed garlic, 1/2 C (125 ml) thinly-sliced chorizo and 1 t (5 ml) paprika. Add 200 g small chunks of white fish and cook for 2 minutes. Add 100 g small calamari tubes or rings and cook for 1 minute.

Pour in 3 T (45 ml) each white wine and chicken, veg or fish stock and zest of 1 lemon. Toss to mix. Stir in rice and cook to heat through. Add 200 g cooked, peeled prawns (with tails), and 3 T (45 ml) chopped parsley. Season and cook for another 5 minutes to heat through thoroughly. Serve in small bowls or cones* with cocktail forks. *Available from catering supply companies.
