Aside from being one of the most popular soups in the world, Tom Yum Soup has many health benefits.
Tom yum (or tom yam) is a clear soup packed with traditional Thai flavours. It s the base to which vegetables are added (mushrooms, for sure), chicken, prawns or mixed seafood.
TOM YUM SOUP
serves 4
8 C (2 000 ml) vegetable stock
2–3 stalks lemongrass, cut into chunks
6 dried lime leaves
2–3 chillies, finely sliced
4 garlic cloves, finely sliced
3 cm fresh ginger root, peeled and sliced
4 T (60 ml) fish sauce
2 t (10 ml) brown or palm sugar
1 C (250 ml) mixed mushrooms
1 C (250 ml) baby marrow, finely sliced into strips
1 C (250 ml) carrots, peeled into ribbons
1 red pepper, sliced into strips
juice of 2 limes, optional
1 large handful coriander
Pour stock, lemongrass, lime leaves, chillies and ginger into a large pot and bring to boil. Reduce heat; simmer for 20 minutes. Add fish sauce, sugar and veggies. Simmer for 5 minutes to just cook through. Remove from heat, add lime juice and coriander, and serve.
