A pasta salad is an easy, flavourful addition to any picnic, braai or party.
Serves: 6 | Prep Time: 15 minutes | Cook Time: 1 hour, 15 minutes

Ingredients:
2/3 cup dry whole-wheat fusilli
2/3 cup dry pasta
1/4 cup reduced-fat mayonnaise
1/4 cup non-fat plain Greek yoghurt
2 tablespoons apple cider vinegar
1 1/2 teaspoons Dijon mustard
1/2 teaspoon salt, or to taste
1/4 teaspoon freshly ground black pepper, or to taste
2 medium carrots, grated
1/2 red or yellow bell pepper, finely chopped
3 scallions (spring onions), thinly sliced
3 tablespoons chopped fresh parsley
Instructions:
1. In a medium saucepan, bring water to a boil. Cook pasta for 10 minutes, or until al dente.
2. Drain, run under cool water, and set aside. Meanwhile, whisk together mayonnaise, yoghurt, vinegar, mustard, salt, and black pepper.
3.Add pasta and toss to combine. Gently mix in carrots, bell pepper, and scallions. Refrigerate for at least one hour to allow flavours to blend. When ready to serve, top with parsley.
