Potatoes have a high GI. But sweet potatoes and baby potatoes with skin have a lower GI. Use this low fat roasting method to slim your waistline.

Serves 2
Nutritional content per serving:
Sweet potatoes: 480kJ | 54 GI | 1,4g fat | 21g carbohydrate | 3g fibre | 2g protein
Baby potatoes: 406kJ | 62 GI | 1,2g fat | 19g carbohydrate | 2g fibre | 2g protein

Ingredients:

2 small sized sweet potatoes OR 16 baby potatoes
canola or olive oil

Instructions:

  • Cook the potatoes in their jackets in a microwave or on the stove in boiling water, until just done, but still firm.
  • Preheat the oven to 200 C.
  • Peel the sweet potatoes, but leave the skins on the new potatoes.
  • Pour about 25ml oil (2 dessertspoons) into a flat baking pan and place into the hot oven.
  • As soon as the oil is hot, (about 5 minutes) remove the baking pan from the oven and pour ALL the oil out !
  • Place the cooked potatoes into the baking pan and toss or turn until all the potatoes are completely covered in a thin layer of oil.
  • Roast, turning once, until evenly browned.
