Feel like spoiling yourself at lunch? These delectable rolls will have you wondering why you ever settled for the peanut butter sandwich.
SERVES 2
PRAWN ROLL
Ingredients:
4 large prawns, cleaned, shelled and cooked
5 g carrots, peeled and thinly sliced
5 g leeks, thinly sliced
5 g cucumber, thinly sliced
5 g lettuce, thinly sliced
5 g coriander, thinly slice
2 rounds of rice paper
Instructions:
Mix all the ingredients in a mixing bowl. Soak the 2 sheets rice paper for 5 seconds in lukewarm water. Let the water run off and gently pat them dry. Place the sheets on two bamboo rolling mats, fill each round of rice paper with half of the prawn mixture and gently roll the rice paper around the filling using the mat. Halve each prawn roll diagonally and serve with the chilli sauce.
CHILLI SAUCE
Ingredients:
10 g red chilli 5 g garlic, finely chopped
5 g ginger, finely chopped
10 g coriander, finely chopped
10 g peanuts, finely chopped
10 ml fuchi chilli
15 ml sweet chilli sauce
2 ml fish sauce
Instructions:
Stir all the ingredients together and serve
