This tasty soup is light and bright and contains avocado — the ultimate superfood!
SERVES 4
Ingredients
30 ml olive oil
1 onion and 4 garlic cloves, finely sliced
1 tin chopped tomatoes
1.2 L low-sodium vegetable or
chicken stock
5 ml ground cumin
30 ml tomato paste
2.5 ml sea salt and 2.5ml sugar
1 green chilli, sliced
1 grilled, skinless chicken breast
1 tin cannellini beans, drained
For the salsa:
1 avocado, peeled and diced
1 small red onion, finely diced
Handful of coriander leaves
Zest and juice of 1 lemon
Salt and pepper to season
Nachos to serve
Instructions
Heat olive oil in a pan. Cook the onion for 5 minutes. Add the garlic and tinned tomatoes and cook for another 5 minutes. Pour in the stock, add cumin, tomato puree, salt, sugar and chilli and bring to the boil. Tear the chicken into bite-sized pieces. Add the chicken and beans to the soup and heat through. Make the salsa by combining all the salsa ingredients. Pour the soup into four warm bowls and top with avocado salsa. Scatter with crispy nachos.
