Vegetable greens are very nutritious. They contain a whole spectrum of good-for-you vitamins and minerals like folate, potassium, magnesium and many more.
Serves 4
Pesto:
big handful fresh basil leaves
30 ml olive oil
30 ml pine nuts, lightly toasted
60 ml grated Parmesan cheese
2 garlic cloves, creamed
salt and freshly ground black pepper
4 baby marrows
200 g mange tout, thinly sliced lengthwise
200 g fresh peas
1. Combine all the pesto ingredients in a food processor and process until smooth. Season to taste. You can thin it out with a few tablespoons of water if the paste is too dry.
2. Use a vegetable peeler to make ribbons of the baby marrow.
3. Toss the baby marrow ribbons, mange tout and peas together with the pesto.
