Ingredients and Method

Strawberries are a great source of vitamin C.
150 ml water
150 g castor sugar
30 ml rosewater
500 g strawberries, halved
200 g gooseberries, halved
Zest of 2 limes
Handful of mint leaves
50 g pistachio nuts, toasted
Greek yoghurt
Place water and castor sugar in a saucepan and heat until dissolved. Add rosewater and leave to cool. Add strawberries and gooseberries to the cooled rose syrup. Leave to macerate for 1 hour. Spoon the berry mixture into glass bowls or plates and garnish with lime zest and mint leaves. Scatter with pistachio nuts and serve with Greek yoghurt.
