This salad is a refreshing choice in the heat of summer as it provides minerals and vitamins for healthy looking skin.

Fabulous figs
In ancient Greece the sensual fig was a sacred fruit associated with fertility and love. Apart from their aphrodisiac properties they are also a good source of dietary fibre and minerals such as potassium, calcium, magnesium, iron, copper and manganese. Their dried equivalent contain an impressive 250 mg of calcium per 100 g.

Nutritional content per serving:
648kj | 14g carbohydrate | 6g protein | 9g fat | 4g fibre

Ingredients:
2 heads radicchio, trimmed
1 fennel bulb, trimmed and finely sliced
4 ripe figs, quartered
handful of mint leaves
1/2 red onion, thinly sliced
150 g goat’s cheese, crumbled
salt and ground black pepper

Instructions:
1. Separate the radicchio leaves, then tear each one roughly in three pieces.
2. Mix the radicchio with the fennel, figs, mint, onion and cheese. Season to taste.

Picnic salad dressing
Mix 1 clove of garlic, crushed and chopped with 1/4 tsp whole grain mustard, 1/4 tsp ginger, peeled and grated, 1/2 tsp honey, juice of 1 lemon, 125 ml apple juice and 15 ml olive oil. Drizzle over the salad just before munching.
