Ingredients and Method

You’ll want nothing more than to bite into one of these freshly baked feel-good muffins.

Makes 6

- 350 ml self-raising flour
- 10 ml ground cinnamon
- 3 ml bicarbonate of soda
- 125 ml porridge oats
- 180 ml light muscovado sugar
- 1 egg, lightly beaten
- 150 ml buttermilk
- 5 ml vanilla extract
- 90 ml sunflower oil
- 350 ml stoned prunes, chopped
- 100 g (1 packet) almonds
- 1 Preheat oven to 180 degrees celcius.

Directions
1. Line a large muffin tin with muffin cases.
2. Sift the flour, cinnamon and bicarbonate of soda into a large mixing bowl. Add the oats and sugar and mix through.
3. Mix the egg, buttermilk, vanilla and oil together.
4. Stir the egg mixture into the flour and fold the prunes and almonds into the mixture.
5. Fill the muffin cases 3/4 full with the mixture and bake for 20–25 minutes until well risen and golden.

Notes on the side
Oats
Oats are rich in complex carbohydrates and soluble fibre which releases energy more slowly and provides sustainable energy, keeping you fuller for longer.

Oil
Some types of oil can actually improve your health and our bodies require certain essential fatty acids to function properly. Sunflower oil, used in this recipe, is a good source of these essential fatty acids. You can also use olive oil or substitute the oil with fruit purue to eliminate the fat altogether.
