SERVES 4
1 red chilli and 4 garlic cloves, chopped juice and zest of 1 lime 1/4 cup olive oil salt and freshly ground black pepper 4 wholewheat pita breads, halved 4 chicken breasts, butterflied For the cabbage salad: 11/2 T malt vinegar mixed with 1 t brown sugar 1/2 white cabbage, thinly sliced 3 carrots, peeled and grated 4 spring onions, sliced 1/2 cucumber, strips or ribbons 4 cos lettuce leaves, sliced 1/4 cup sesame seeds, toasted 1/2 cup ready-made tzatziki to serve Combine chilli, garlic, lime juice with the zest, olive oil, salt and pepper. Drizzle half of the marinade over the chicken. Cover and refrigerate for 30 minutes.
Brush the pita sides with reserve marinade and grill until toasted. Halve again. Char-grill the chicken (3 minutes each side, or until cooked), then slice each breast in half. Combine the salad ingredients. Place a piece of the chicken breast on half a pita bread, then top with cabbage salad, a dollop of tzatziki and the other pita half.
