Avocado is a complete food, making it the ideal no-cook soup recipe.
Serves 4
2 ripe avocados + 1 extra for garnish
2 cups low-fat buttermilk
1/3 cup flaked almonds
1/3 cup fresh dill sprigs, plus more for garnish (optional)
1/3 cup diced red onion, or half a small onion
1 teaspoon coarse salt
Juice of half a lemon
Handful baby tomatoes, halved
1 lime, peeled and cut into segments.
1. Halve and pit two avocados. Using a spoon, scoop out the flesh and transfer to a blender. Add buttermilk, almond, dill, red onion, vinegar, salt, and 1 cup of water and puree until smooth.
2. Cover the blender and refrigerate until the soup is well chilled, at least one hour.
3. Halve and pit the remaining avocado. Cut into small blocks and sprinkle the lemon juice over. Divide soup among four glasses and garnish each with diced avocado, dill and tomatoes and lime.
