Don’t know what’s for supper? Try this easy stir fry that’s delicious and healthy.

Ingredients:

120 g chicken fillet (skin removed)
1 cup of stir-fried vegetables (onion, carrots, baby marrows, julienne carrots, peppers)
12 cashew nuts
1 t of canola or olive oil
4 T of reduced salt soya sauce
½ cup cooked low GI rice mixed with ½ cup cooked lentils

Instructions:

  1. Add the lentil and low GI rice in a pot and boil until cooked.
  2. Cut chicken fillet into thin slices and marinate in soya sauce.
  3. In a wok or large frying pan cook the chicken for 4-5 minutes over a high heat and set aside in a bowl.
  4. Now add the vegetables to the wok and stir-fry for 3-4 minutes.
  5. Add the chicken and the cashew nuts to the pan and continue to stir-fry for 1 minute.
  6. Serve with cooked rice.
