Ingredients and Method

Summer quencher
This drink is perfect for refreshing non-alcoholic entertaining.

Makes 1.5 L

Ingredients:

500 ml soda water
500 ml strong rooibos tea
2 cups granadilla juice
2 granadillas, halved
3 whole strawberries
handful of mint leaves
500g ice

Instructions:

Combine ingredients and pour into a 1.5 L jug.

Grapefruit crush
Makes 1.5 L

Ingredients:

360 ml tequila
1 L grapefruit juice
4 T castor sugar
8 ice cubes
1 grapefruit, segmented
fresh mint leaves, to garnish

Instructions:

1. Place the tequila, grapefruit juice, sugar and ice in a blender and blend until smooth.
2. Pour the grapefruit crush into glasses.
3. Top each with grapefruit segments and mint leaves.

Mexican mojito
Serves 4

Ingredients:

1 lime, quartered
Maldon salt, crushed
Handful of mint leaves
2 limes
1/4 cup sugar
2 cups ice
6 shots tequila
1 litre soda water
mint, and lime wedges, to garnish

Instructions:

1. Rub the edges of 4 glasses with a lime wedge and dip the edge in salt. Squeeze the rest of the lime juice into each glass.
2. Crush the mint leaves, lime and sugar together. Add the ice, tequila and soda, stir.
3. Pour the mixture into the salted glasses and finish off with a lime wedge and mint sprigs.

Japanese punch
A deliciously refreshing punch that doubles as a hangover cure. Makes 1.5L

Ingredients:

Ginger syrup (16 slices fresh ginger, peeled
and sliced; 1 cup boiling water; 1 cup sugar)
3 cups sake (Japanese rice wine)
1 cup lime juice
2 cups soda water
6 sticks lemongrass, trimmed and slightly bruised
Sliced ginger, for garnish
Sliced lime, for garnish

Instructions:

1. To make the ginger syrup, combine the ginger, water and sugar in a small jug and stir until the sugar is dissolved. Set aside and allow to cool.
2. Pour the sake and lime juice in a jug and stir with the lemongrass to combine. Add the ginger syrup, soda water and a few lime slices, mix.
