
We hold these truths to be self evident: Fried chips are bad. Salad is good.
But Bruce Weinstein, co-author of Lobsters Scream When You Boil Them and 100 Other Myths About Food and Cooking (Gallery Press), says it’s not always so black and white.
Here is his take on three popular misconceptions:
Fried food is a big, fat don’t
“When frying is done right, you end up with very little oil in the finished dish,” he says. “The trick is to get the oil hot enough.” Use a deep-frying thermometer to reach the right temperature: 190°C.
Spinach is an iron superhero
Popeye’s favourite food has about as much of the nutrient as any other leafy green – plus vitamins A and C. “But it also contains a lot of oxalic acid, which blocks the absorption of iron,” says Weinstein. Better bets: turnip greens and kale.
White wine is lighter than red
“A 150 ml glass of wine has between 400 to 600 kJ, regardless of the colour,” says Weinstein. “The difference depends only on how sweet it is.”
